Apple Night

I hosted a pie making party with Target Spots friends. Homemade pie crust is so simple but not so easy, yet it’s worth the extra effort. (Here’s the recipe for a double-crust pie.) With four helpers, we peeled and diced apples, added sugar and spice, rolled out the pastry, and painted decorative apples on the crust. We rounded out the evening with takeout Chinese food, singing and board games–oh, what a night!

Not an Exit

“Let’s take the stairs,” someone said at the offfice. “It will be good for us.” So, the three of us started down the stairs in City Center. We saw several doors that said “Not an Exit,” which at first was funny and for a fleeting minute, a blogworthy moment…

…Until we realized we were locked in the stairwell. Next time, I’ll stick with Stairmaster.

My college buddy Brian, his wife Kaitlyn and I drove to South Dakota for the weekend for a 40-hour adventure. It turns out you can stay pretty busy, even in a small town.

– Horseback riding on Sandman and Barney the mule
– Visit to the tri-state area with a loop down Dakota Ave in South Sioux City, Nebraska
– Lunch in Sioux City, Iowa (Amen for Chick-fil-A!)
– A visit to Palmer Candy for their cherry Twin Bing bars, a Midwestern favorite.
– A visit to Vermillion, South Dakota to tour the National Music Museum
– Church and then dinner at Los Amigos, one of two sit down restaurants in my hometown, and some of the best Mexican food north of the border.
